Amazing topics, thank you! In grad school I wrote a paper on the 1909 and 1913 Country Life Surveys and the roles of farm women's labor and the shift from producer roles to consumer/housewife roles. I called it "No Occupation" after a common census record taker's notation next to the occupation of the farmer's wife. Ironic designation. USDA also did amazing kitchen design research in the 1940s and '50s. Sadly, they got rid of that department, too.
