Join us on a journey of unexpected joy found right in Kim’s pantry, all thanks to the timeless culinary companion, "The Joy of Cooking" by Irma Rombauer.
I am wishing I had a bag of stale tortilla chips to turn into migas! I tend to have stale tortillas more often than chips and usually I use them up in tortilla soup. Nothing like finding inspiration in an old cookbook for a dish that never grows old and has so many modern corollaries that actually all have ancient roots--like chilaquiles and shakshuka! Love it!

You can make migas with tortillas too! Just cut them into strips (or stars, or whatever) and fry them up for a few minutes for a crispier texture.
