Dish-Covery: Shoo-Fly Pie
This darling of Pennsylvania Dutch cookery isn't exactly what it looks like
Working on research for our dumpling trilogy (Part 1 is here, Part 2 debuts next Tuesday!) takes me back to family road trips around the Midwest where we’d often stop to eat at family restaurants serving Amish and “Pennsylvania Dutch” cooking. Each place proudly served generous slices of “shoo-fly pie” which seemed to be a dish greater than the sum of its parts. What IS shoo-fly pie? Is it really dessert or is it a breakfast dish?
