Sometimes food is incredibly straight-forward; as we recently discovered, pilaf is what it is - the dish produced by its cooking method. Other foods have a longer journey, like fish stew that grew into bouillabaisse or cioppino or chowder. Pralines have a similarly history which made me ask this question - what is a praline anyway?
